It would help our estimators immensely as we have upwards of 40+ jobs going simultaneously and a color option is an easy identifier for us.

FYI, We recently added two new fields to Cost Database Work Items called 'Color' and 'Finish', but these are not available on PO's plus they are not pull-downs.
I am not sure where these color options would show up. Are you thinking the PO Line Items or the list of PO's themselves. Please provide more context or even a screen shot mocked up to show us what you need.

We are looking to add it as an entry for each PO so that we can have a drop-down option. I have a marked up screen shot below.
