Removing former employees and contact management contacts. People leave companies, the inability to remove contacts because they are linked to meeting minutes, subcontracts etc. is not effective or helpful.

Have you tried making the contact or employee inactive?
Having a default option that would aumatically replace like (unknown) or just the company's name would be a simple fix.
